Grilled shrimp salad with zesty dressing.
Ingredients:
  • 1/2 lb uncooked peeled deveined medium shrimp, thawed if frozen, tail shells removed
  • 1 teaspoon olive or vegetable oil
  • 1/8 teaspoon salt
  • 4 cups chopped romaine lettuce
  • 1 medium stalk celery, finely chopped (1/2 cup)
  • 1/2 cup chopped red bell pepper
  • 1 cup grape tomatoes, cut in half
  • 2 tablespoons reduced-fat mayonnaise
  • 1 tablespoon plain yogurt
  • 1 tablespoon shrimp cocktail sauce
  • 1/2 teaspoon grated lemon peel
  • 1 to 2 tablespoons fat-free (skim) milk
Instructions:
  • Preheat your grill over medium-high heat. Skewer shrimp onto two metal skewers, leaving a small space between each one. Brush the shrimp with oil and sprinkle with a pinch of salt.
  • Grill the kabobs over medium heat for 4 to 6 minutes, turning once, until the shrimp are perfectly pink and firm. Slide the shrimp off the skewers.
  • Divide lettuce between 2 plates. Arrange celery, bell pepper, tomatoes, and grilled shrimp on top. Enjoy!
  • Combine all dressing ingredients in a small bowl, adjusting the amount of milk to reach your preferred consistency. Drizzle the dressing onto the center of each salad.
