Grilled Turkey Breast with Chili Cumin Rub

Feed a crowd with grilled chili-cumin turkey breast. The versatile rub doubles as a tasty seasoning for chicken or pork.
Ingredients:
  • 2 tablespoons packed brown sugar
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic pepper blend
  • 1/2 teaspoon salt
  • 5- to 6-lb bone-in whole turkey breast, thawed if frozen
  • 2 tablespoons firm butter or margarine
Instructions:
  • For charcoal grill, position a drip pan with 1/2 inch of water beneath the grilling area and place coals around the firebox edge. Preheat coals or gas grill for indirect heat.
  • Combine all ingredients, excluding turkey and butter, in a small bowl. Gently separate the skin from the turkey breast in several spots. Slice the butter thinly and tuck it evenly under the turkey's skin. Massage the chili powder blend all over the turkey. Insert the barbecue meat thermometer into the thickest part of the turkey, making sure it doesn't touch the bone.
  • Grill the turkey, skin side down, over medium heat for 30 minutes using indirect heat. Flip the turkey and continue grilling for 1 hour 30 minutes to 2 hours until the thermometer reads 170°F and the juices run clear when the center is cut. Enjoy!
  • After the turkey is done grilling, gracefully cover it with foil and allow it to rest for 10 minutes before elegantly slicing.
