Satisfying lean beef stroganoff casserole with creamy mushroom sauce - perfect for quick dinners.
Ingredients:
  • cooking spray
  • 1 pound extra-lean (94%) ground beef
  • 0.5 teaspoon ground black pepper
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 0.5 cup dry white wine
  • 1 (10.75 ounce) can fat-free condensed cream of mushroom soup (such as Campbell's®)
  • 0.5 cup fat-free sour cream
  • 1 tablespoon Dijon mustard
  • 4 cups cooked egg noodles
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a 9x13-inch baking dish with cooking spray.
  • Heat a large nonstick skillet over medium-high heat and spray with cooking spray. Add ground beef and cook for about 10 minutes, breaking it up until browned. Season with salt and pepper.
  • Combine mushrooms, onion, and garlic in the skillet and sauté until onion is tender. Pour in wine and simmer on low heat for 3 minutes. Stir in cream of mushroom soup, sour cream, and mustard.
  • Transfer the cooked noodles to a spacious bowl and generously drizzle the flavorful beef mixture on top. Mix well to ensure every strand is coated thoroughly. Then, transfer the delicious mixture into the ready baking dish and securely cover it with aluminum foil.
  • Bake until bubbly in the preheated oven for approximately 25 minutes.
