Savory ground chicken meatballs with flavorful cilantro and onions, perfect for skewering and dipping in zesty Asian peanut sauce.
Ingredients:
  • 4 tablespoons sesame oil
  • 1 pound ground chicken
  • 0.5 cup chopped cilantro
  • 0.25 cup dry bread crumbs
  • 0.25 cup grated onion
  • 2 cloves garlic, grated
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 0.25 cup peanut butter
  • 3 tablespoons white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped peanuts, or to taste

Instructions:
  • Combine the chicken, cilantro, bread crumbs, onion, garlic, salt, and pepper into a delicious mixture, then form into tablespoon-sized balls.
  • Warm up the oil in a skillet on medium heat then toss in the meatballs and cook for 6 to 8 minutes until they're no longer pink in the center.
  • Combine creamy peanut butter, fragrant sesame oil, sweet sugar, and savory soy sauce in a microwave-safe bowl. Heat in the microwave until the sauce is warmed through, around 1 minute.
  • Coat meatballs in half of the sauce, then sprinkle with peanuts. Serve with toothpicks and the extra sauce on the side for dipping.
