Chai-infused chocolate cupcakes for a romantic or special celebration.
Ingredients:
  • 0.5 cup unsalted butter
  • 2 (1 ounce) squares unsweetened chocolate, chopped
  • 4 chai tea bags
  • 0.5 cup all-purpose flour, sifted
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and prepare a muffin tin by lining it with 10 paper liners.
  • Gently melt butter and chocolate in a double boiler until velvety smooth, stirring often and using a rubber spatula to scrape down the sides to prevent burning, for 5 to 10 minutes.
  • Unwrap the tea bags and transfer the chai mixture into a spice grinder. Pulse for 5 to 10 seconds until finely powdered.
  • In a large bowl, combine flour, sugar, and chai powder. Add eggs one at a time, whisking until smooth after each addition. Mix in vanilla extract. Gently fold in the chocolate mixture until just combined. Pour the batter into the prepared muffin cups.
  • Bake in the preheated oven for about 25 minutes or until a toothpick inserted in the center of a muffin comes out clean and the tops are glossy and slightly cracked. Remove muffins from tin and cool on a wire rack.
