Simple and vibrant Christmas cake perfect for a festive table centerpiece.
Ingredients:
  • 2 cups white sugar
  • 3 eggs
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 3.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons salt
  • 1 teaspoon lemon extract
  • 1 cup gumdrops, chopped
  • 1 cup raisins
  • 0.25 cup all-purpose flour for coating
Instructions:
  • Preheat your oven to 350 degrees (175 degrees C) and generously grease and flour a 10-inch tube pan.
  • In a large mixing bowl, whip together the butter and sugar until creamy and fluffy. Gradually add the eggs, one at a time, mixing well after each addition.
  • Combine the dry ingredients in a bowl and mix them into the creamed mixture with water alternately. Dust the raisins and gumdrops with flour. Add the flavorings, gumdrops, and raisins to the creamed mixture and stir.
  • Thoroughly combine the mixture and transfer it into the pan. Bake for 90 minutes.
