Halloween Goblin Cupcakes

Get into the Halloween spirit with these creepy-cute Purple People Eater cupcakes made with Betty Crocker® vanilla cake mix and topped with white frosting.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Vanilla Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 3 cups from 2 tubs (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 2 cups purple candy melts
  • 1 tablespoon shortening
  • 1 teaspoon purple paste food color
  • 18 large candy eyes
Instructions:
  • Preheat oven to 350°F. Line 24 regular-size muffin cups with paper baking cups. Prepare cake mix as instructed on the box to make cupcakes with water, oil, and eggs. Line a cookie sheet with waxed paper. Crumble 6 cupcakes into a large bowl; mix in 1/4 cup of the frosting. Form into 18 (1-inch) balls and place on the cookie sheet. Chill in the freezer for 15 minutes until firm; store in the fridge.
  • 1. In a microwave-safe bowl, heat candy melts and shortening in the microwave on Medium (50%) power for 1 minute, then in 15-second intervals until fully melted. Stir until smooth. 2. Take a few cake balls out of the refrigerator. 3. Dip each cake ball into the melted candy using a fork, tapping off any excess. 4. Place the coated cake balls back on a cookie sheet and refrigerate them.
  • Prepare another cookie sheet by lining it with waxed paper. Transfer the leftover melted candy into a resealable food-storage plastic bag and seal it. Cut a small corner off the bag and use it to pipe out 18 "horns" and 36 "wings" onto the prepared cookie sheet. Allow them to set until firm.
  • Mix the remaining 2 3/4 cups of frosting with food color in a small bowl. Pipe the colorful frosting onto the cupcakes, then place a cake ball on top of each one. Attach horns and candy eyes to the cake balls using melted candy. Finally, insert the wings into the frosting. Enjoy your whimsical cupcakes!
