Kid-friendly mummy-shaped cocoa cookies with white chocolate coating - spookily irresistible!
Ingredients:
  • 0.66666668653488 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.25 teaspoon baking soda
  • 2 (11 ounce) packages white chocolate chips, or as needed
  • 1.5 tablespoons solid vegetable shortening, or as needed
  • miniature chocolate chips
Instructions:
  • Using an electric mixer, combine butter and sugar in a large bowl until smooth. Add eggs one at a time, ensuring each egg is fully mixed in before adding the next one. Finally, stir in the vanilla extract.
  • Combine flour, cocoa powder, baking soda, and salt in a bowl. Mix into the butter mixture. Shape the dough into a log and wrap with waxed paper, parchment, or plastic wrap. Chill in the refrigerator until firm, around 30 minutes.
  • Preheat the oven to 350°F (175°C).
  • Slice pieces from the log into narrow wedges about 3 inches long. Place the wedges on a baking tray. Cut more slices, then shape teaspoon-sized pieces into balls. Flatten and press the balls onto the wide ends of the wedges to create the "heads" of the mummies.
  • Bake in a preheated oven until cookies are set and edges are dry, approximately 8 minutes. Allow to cool in the pan for 1 minute, then transfer to a wire rack to cool completely.
  • 1. In a microwave-safe bowl, melt white chocolate chips with vegetable shortening until smooth, heating in 20-second intervals for 1 to 2 minutes. Stir well. 2. Use a small spatula or butter knife to top each cookie with the warm white chocolate coating. 3. Reheat the white chocolate briefly in the microwave and stir if it thickens too much. Repeat the process for the remaining cookies.
  • Score lines for "bandages" on each cookie using a toothpick, then place mini chocolate chips on the mummy heads for eyes.
