Delicious ham, egg, and cheese breakfast sandwiches on English muffins, great for feeding a crowd or preparing ahead for busy mornings.
Ingredients:
  • 2 (12 ounce) packages English muffins
  • 1 tablespoon butter
  • 12 large eggs
  • 12 slices deli ham, warmed
  • 12 slices Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and place split English muffins on a sheet pan.
  • Spread butter evenly in each section of a 12-cup muffin tin, then gently crack an egg into each one, breaking the yolks if desired.
  • In a preheated oven, simultaneously toast the English muffins until golden brown in about 3 minutes and bake the eggs until set in 10 to 15 minutes. Remove the muffins when done.
  • Using a spatula, transfer eggs onto English muffins. Layer with ham and Cheddar cheese. Serve immediately.
