Create a stunning ham and asparagus appetizer with just 5 simple ingredients.
Ingredients:
  • 12 fresh asparagus spears (about 1 lb)
  • 1/4 cup mayonnaise or salad dressing
  • 1 tablespoon Dijon mustard
  • 1 teaspoon chopped fresh thyme leaves
  • 6 slices (1/16 inch thick) cooked ham (from deli; about 10 oz)
Instructions:
  • Prepare a large 13x9-inch glass baking dish by filling it halfway with water and ice, then set it aside.
  • Heat 1 inch of water in a 12-inch skillet until boiling. Trim asparagus spears, then add them to the boiling water. Cook for 2 to 3 minutes until crisp-tender. Transfer asparagus to a baking dish filled with ice water and let cool for 3 to 5 minutes. Drain, pat dry, and set aside.
  • In a small bowl, combine mayonnaise, mustard, and thyme.
  • Spread a generous teaspoon of the flavorful mayo mixture over each slice of savory ham, leaving a bit of space at the edges. Carefully slice each ham piece in half lengthwise. Roll each strip of ham snugly around a fresh asparagus spear and store tightly covered in the refrigerator until ready to serve.
