Create a comforting ham and cheese chowder with potatoes, carrots, and corn for a cozy weeknight meal.
Ingredients:
  • 2 cups peeled and cubed Yukon Gold potatoes
  • 1.75 cups chicken broth
  • 0.5 cup sliced carrots
  • 1 teaspoon minced garlic
  • 0.75 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 2 cups frozen corn
  • 1.5 cups cubed fully cooked ham
  • 0.25 cup butter
  • 0.25 cup cornstarch
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • In a large pot, bring potatoes, broth, carrots, and garlic to a boil for about 5 minutes. Stir in salt, garlic powder, and black pepper. Cover and simmer until potatoes and carrots are tender, about 8 to 10 minutes. Add corn and ham, then simmer on low heat.
  • As the soup simmers, melt butter in a saucepan, then whisk in cornstarch. Pour in milk and whisk until thickened and bubbly, about 3 to 5 minutes. Stir in Cheddar cheese until melted, around 2 minutes. Transfer the cheesy mixture into the soup pot. Cook over medium heat until heated through, stirring occasionally, for about 2 minutes. Serve when ready.
