Fuel your hunger with this fast and nutritious snack!
Ingredients:
  • 1 firm ripe avocado, halved, stone removed, peeled, cut into 1cm pieces
  • 150g sliced ham, cut into thin strips
  • 40g (1/2 cup) cheddar, coarsely grated
  • 1/2 small red capsicum, deseeded, cut into 1cm pieces
  • 65g (1/4 cup) low-fat mayonnaise
  • 4 butter lettuce leaves, washed and dried
  • 4 corn cakes
  • 1 shallot, ends trimmed, thinly sliced, to serve
Instructions:
  • In a bowl, mix together avocado, ham, cheddar, and capsicum. Add mayonnaise and stir well. Spread lettuce over corn cakes, then top with the ham mixture and shallots.
