Ham and mustard mac 'n' cheese

Irresistible creamy mac 'n' cheese topped with crispy potatoes for the whole family.
Ingredients:
  • 250g dried macaroni
  • 40g butter, chopped
  • 200g shaved lean leg ham, shredded
  • 62.50 ml plain flour
  • 46.80 gm dijon mustard
  • 643.75 gm milk
  • 250.00 ml grated reduced-fat cheddar
  • 125.00 ml finely grated parmesan
  • 2 medium sebago potatoes, peeled, coarsely grated
  • 40.00 ml finely chopped fresh chives
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced. Grease four 2-cup capacity freezer-proof, ovenproof baking dishes. Boil macaroni in a large saucepan of water per packet instructions until tender, then drain.
  • In a large saucepan over medium heat, melt butter until sizzling. Stir in ham and garlic, cooking for 2 minutes until ham is warm. Next, add flour and mustard, stirring until the mixture bubbles and thickens. Finally, remove from the heat.
  • Slowly incorporate the milk into the mixture. Bring it back to the heat and cook while stirring for 5 minutes until it boils and thickens. Take it off the heat and mix in the cheddar until melted. Add the pasta and season with pepper. Combine everything well. Serve in the prepared dishes or follow freezing instructions in the note.
  • Toss together parmesan and potato, then sprinkle over the pasta mixture. Bake for 30 minutes until golden and crisp. Serve topped with chives.
