Cheesy pineapple and ham egg bake.
Ingredients:
  • 1 1/2 cups chopped fully cooked ham
  • 1 can (8 oz) crushed pineapple in juice, drained
  • 4 medium green onions, sliced (1/4 cup)
  • 1 cup Original Bisquick™ mix
  • 1 cup milk
  • 2 eggs
  • 2 teaspoons yellow mustard
  • 1 cup shredded Colby-Monterey Jack cheese (4 oz)
Instructions:
  • Preheat oven to 400°F and generously coat a 9-inch glass pie plate with cooking spray.
  • Spread a layer of ham, pineapple, and onions in a pie plate. In a separate medium bowl, combine Bisquick mix, milk, eggs, and mustard until smooth; then pour over the ham mixture in the pie plate.
  • Bake uncovered for around 25 minutes or until a knife inserted in the center comes out clean. Sprinkle with cheese and bake for an additional 3 to 4 minutes until the cheese is melted.
