Kids can make mini pizzas for dinner tonight.
Ingredients:
  • 4 small wholemeal pita bread pockets
  • 60ml pizza sauce
  • 100g mozzarella
  • 200g finely shaved leg ham
  • 50g Red Leicester cheese, thinly sliced
  • 1/2 ripe pineapple, peeled, cored, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 125.00 ml chopped coriander
  • Coriander leaves, to serve
Instructions:
  • Preheat your oven to 230°C. Place pita bread on 2 oven trays, spread pizza sauce, sprinkle with mozzarella, add ham, and top with Red Leicester cheese. Bake for 10 minutes or until cheese is melted and ham is slightly charred.
  • In a small bowl, blend together the pineapple, chili, and coriander.
  • Transfer the pizzas onto the plates and generously spoon the zesty pineapple salsa on top. Finish by delicately sprinkling fresh coriander over the pizzas before serving promptly.
