Ham and Scalloped Potato Pie

Savory ham and scalloped potatoes casserole with a flaky pie crust.
Ingredients:
  • 1 bag (20 oz) refrigerated home-style potato slices
  • 3 tablespoons butter
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 2 cups milk
  • 1 cup shredded Swiss cheese (4 oz)
  • 1/2 teaspoon freshly ground pepper
  • 1 1/2 cups cubed cooked ham
  • 1 crust from 1 package (12 oz) frozen Pillsbury™ Deep Dish Pie Crusts (2 Count)
  • 1/2 cup Progresso™ panko crispy bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon finely chopped fresh parsley
Instructions:
  • Preheat oven to 350°F. Microwave potatoes according to package instructions until tender.
  • In a 3-quart saucepan over medium-high heat, melt 2 tablespoons of butter. Stir in the flour and cook for 1 minute, stirring constantly. Gradually pour in the milk while stirring constantly. Bring to a boil and cook until the mixture thickens. Add Swiss cheese, salt, and pepper, stirring until the cheese melts. Mix in the ham and cooked potatoes. Spoon the mixture into a frozen pie crust and place it in a 9 1/2-inch deep dish pie plate or on a cookie sheet. Bake for 20 minutes.
  • Microwave the remaining 1 tablespoon of butter in a medium microwavable bowl until melted. Mix in bread crumbs, Parmesan cheese, and parsley, then sprinkle the mixture over the pie.
  • Continue baking for an additional 25 minutes, or until the topping turns a light golden brown and the filling is bubbling. Allow it to rest for 15 minutes before serving.
