Brighten your day with tasty spring rolls for lunch!
Ingredients:
  • 125g shaved ham
  • 1 carrot, peeled
  • 1 red capsicum
  • 6 iceburg lettuce leaves
  • 12 small rice paper wrappers
  • 41.60 gm tomato sauce
  • 22.60 gm barbecue sauce
  • 5.30 gm soy sauce
  • 7.20 gm honey
Instructions:
  • Slice the ham thinly, grate the carrot, remove the sides and seeds from the capsicum, and cut it into strips. Tear the lettuce into small pieces, then arrange the ham and vegetables in piles on a large platter.
  • Lay a clean tea towel on the work surface. Fill a large, shallow bowl halfway with warm water. Submerge 1 rice paper wrapper in the water and soak for 10 to 20 seconds until it begins to soften. Lift out, let excess water drip off, and transfer to the tea towel.
  • Lay out lettuce, capsicum, carrot, and ham on one side of the rice paper, keeping a 2cm space at each end (avoid overfilling to prevent the wrapper from tearing). Fold in edges and roll up tightly to seal the filling inside. Place the rolls seam side down on a plate and cover with a damp tea towel. Continue making 12 rolls with the remaining ingredients.
  • Prepare the irresistible dipping sauce by mixing all the ingredients in a bowl. Accompany the rolls with this delicious sauce for a perfect pairing.
