Loaded ham and cheese potato casserole with veggies, homemade cheese sauce, and crispy bread crumb topping. Comforting and flavorful.
Ingredients:
  • 2 cups peeled and cubed potatoes
  • 2 stalks celery, chopped
  • 1 large carrot, sliced
  • 3 cups water
  • 2 cups cubed fully cooked ham
  • 2 tablespoons chopped green bell pepper
  • 2 teaspoons chopped onion
  • 0.25 cup butter
  • 1 cup milk, or more as needed
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 1 cup shredded Cheddar cheese
  • 0.5 cup dry bread crumbs
Instructions:
  • Heat your oven to a moderate 350 degrees Fahrenheit (175 degrees Celsius).
  • In a large pot, combine potatoes, celery, and carrot, covering them with water. Bring to a boil, then simmer over medium-low heat until tender, about 20 minutes. Drain and transfer to a 2-quart baking dish.
  • In a large skillet over medium heat, melt 3 tablespoons of butter until sizzling. Sauté ham, green bell pepper, and onion until they're tender, which should take about 5 minutes. Once done, transfer the flavorful ham mixture to a baking dish and combine with the potatoes.
  • In a clean skillet, melt the remaining 1/4 cup of butter until smooth. Stir in flour and cook for about 3 minutes. Gradually mix in milk, season with salt and black pepper, then bring to a boil while stirring constantly until thickened in about 2 minutes. Add Cheddar cheese and stir until melted. Pour the cheese mixture over the ham and potatoes, then sprinkle with bread crumbs.
  • Bake until bubbly in preheated oven for 25 to 30 minutes, then allow casserole to rest for 5 to 10 minutes before serving.
