Christmas main featuring Coles leg ham with homemade pineapple and brandy chutney - a perfect, easy and delicious dish for a festive lunch.
Ingredients:
  • 1 brown onion, finely chopped
  • 2 tsp yellow mustard seeds
  • 1 tsp ground turmeric
  • 1 long red chilli, seeded, finely chopped (optional)
  • 1kg pineapple, peeled, cored, cut into 2cm pieces
  • 220g brown sugar
  • 125ml cider vinegar
  • 80ml brandy
  • 2 x 320g French Sticks*, each cut into quarters crossways
  • 1 Half Leg Ham (Bone In), sliced
Instructions:
  • 1. Heat oil in a medium saucepan over medium heat. Sauté onion until soft, about 5 mins. Add mustard seeds, turmeric, optional chili, and ginger. Cook for 1 min until fragrant. Stir in pineapple, sugar, vinegar, and brandy. Bring to a boil, then simmer on low heat for 50 mins until thickened. Cool before serving.
  • Split each piece of bread lengthwise using a large serrated knife, being careful not to cut all the way through. Serve with the ham and chutney.
