Southern classic: Black coffee-infused gravy with roast ham drippings for a sweet and smoky taste.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 cup chopped fatty ham scraps
  • 4 (1/4 inch thick) slices ham
  • salt and freshly ground black pepper to taste
  • 0.125 teaspoon cayenne pepper, or to taste
  • 1 teaspoon all-purpose flour
  • 0.66666668653488 cup brewed coffee
Instructions:
  • In a skillet over medium heat, sear ham scraps in oil until golden, for about 5 minutes. Transfer to a plate while keeping the flavorful grease in the pan.
  • 1. Pan-sear ham slices over medium heat until golden, about 5 minutes per side. Season generously with salt, black pepper, and cayenne pepper. Transfer to a plate and set aside.
  • Lower the heat and sprinkle flour over the pan drippings, stirring for 2 minutes. Increase the heat, pour in the coffee, and cook until thickened. Season to taste, then return the ham to the pan to warm through.
