Harissa meatball wraps

Prepare a double batch of meatballs to have ready for quick and easy meals on busy days. A smart time-saving strategy to ensure delicious meals in minutes whenever needed.
Ingredients:
  • 500 g minced beef
  • 1 x 250 g sachet of cooked grains or lentils
  • 1 lemon
  • 1 bunch of fresh flat-leaf parsley (30g)
  • 3 teaspoons harissa
  • 350 g red cabbage
  • 1 small red onion
  • 1 red apple
  • 4 tablespoons natural yoghurt
  • 4 wholemeal tortilla
  • pickled chillies optional
Instructions:
  • Combine 500g minced beef, 1 x 250g sachet of cooked grains or lentils, zest of 1 lemon, ½ a bunch (15g) of fresh flat-leaf parsley, 2 teaspoons of harissa, sea salt, and black pepper in a food processor. Blend until well combined. Shape the mixture into 24 meatballs. In a bowl, mix 350g sliced red cabbage, 1 sliced red onion, juice of ½ lemon, salt, pepper, sliced apple, and parsley leaves. Cook 16 meatballs in a pan with olive oil for about 7 minutes until golden and cooked. Mix 1 teaspoon of harissa with 4 tablespoons of natural yogurt. Warm up 4 tortillas. Serve meatballs, slaw, harissa yogurt, and pickled chillies if desired, allowing everyone to assemble their own wraps.
