Tangy Hawaiian meatballs in sweet pineapple sauce with bell peppers served over rice.
Ingredients:
  • 1 pound ground beef
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon garlic powder
  • 1 (8 ounce) can pineapple chunks, juice reserved
  • 0.33333334326744 cup water, or as needed
  • 0.25 cup brown sugar
  • 2 tablespoons cornstarch
  • 0.25 cup white vinegar
  • 1 tablespoon soy sauce
  • 1 green bell pepper, chopped
Instructions:
  • Prepare the meatballs by thoroughly combining ground beef, ginger, garlic powder, and black pepper in a large bowl. Form the mixture into 1 1/2-inch balls.
  • Brown the meatballs in a large skillet over medium-high heat for approximately 10 minutes.
  • As the meatballs sizzle, let's whip up the sauce: Combine pineapple juice with water to make 1 cup in a measuring cup. Then, blend brown sugar and cornstarch in a small bowl.
  • Place the meatballs on a plate and keep the pan drippings. Pour pineapple juice and brown sugar into the warm pan drippings. Add vinegar and soy sauce, mix well, and bring to a boil. Simmer until the sauce thickens, about 2 to 3 minutes.
  • Add the meatballs back to the skillet along with pineapple chunks and green pepper. Let them simmer until the meatballs are fully cooked, about 10 minutes. Make sure to use an instant-read thermometer to check for doneness, with the temperature showing at least 160 degrees Fahrenheit (71 degrees Celsius) in the center.
