"Make a healthier shrimp po' boy in the air fryer for a tasty twist on a classic dish."
Ingredients:
  • 0.25 cup lemon juice
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh tarragon
  • 2 teaspoons Dijon mustard
  • 0.5 teaspoon kosher salt, divided
  • 1 (14 ounce) package shredded coleslaw mix
  • 0.75 cup buttermilk
  • 2 teaspoons hot pepper sauce
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground dried chipotle pepper
  • 0.5 teaspoon ground black pepper
  • 1.5 pounds large shrimp - peeled, deveined, and tails removed
  • 2 cups whole wheat panko bread crumbs
  • 6 (6 inch) whole-wheat hoagie rolls, split and toasted
Instructions:
  • Combine lemon juice, oil, garlic, tarragon, mustard, and 1/4 teaspoon kosher salt in a bowl and whisk until well blended. Add the coleslaw mix and toss until evenly coated.
  • In a separate bowl, combine buttermilk, hot sauce, cayenne, chipotle pepper, black pepper, and remaining salt. Mix well. Add shrimp to the buttermilk mixture, ensuring they are coated evenly. Allow the shrimp to marinate for approximately 5 minutes.
  • Pour 2/3 cup of panko into a shallow dish. Take shrimp out of the buttermilk, allowing excess to drip off. Coat 1/3 of the shrimp in the panko, working in batches, ensuring they are evenly coated. Place on a baking sheet and continue with the rest of the shrimp and panko.
  • Preheat the air fryer to 400 degrees F (200 degrees C following the manufacturer's guidelines.
  • Arrange shrimp in a single layer in the fryer basket, ensuring there is enough space for them to cook evenly. Flip halfway through until shrimp are crispy and cooked through, about 8 minutes total cooking time.
  • Fill the rolls with coleslaw and generously crown with shrimp.
