Healthier sausage rolls recipe

Popular sausage rolls, perfect for BBQs and parties.
Ingredients:
  • 500g lean beef mince
  • 187.50 ml fresh wholemeal breadcrumbs
  • 1 egg white
  • 1/2 red onion, grated
  • 1 carrot, grated
  • 1 zucchini, grated
  • 24.40 gm Worcestershire sauce
  • 45.20 gm no-added-sugar barbecue sauce
  • 22.20 gm no-added-salt tomato paste
  • 2.50 gm smoked paprika
  • 62.50 ml chopped fresh basil leaves
  • 9 sheets filo pastry
  • 80g mixed salad leaves
  • 4 asparagus spears, halved lengthways and crossways
  • 20.00 ml fat-free balsamic dressing
  • 62.50 ml pepita and sunflower seed mix, lightly toasted
  • Reduced-salt and reduced-sugar tomato sauce, to serve
  • Fresh basil leaves, to serve
Instructions:
  • Preheat oven to 200C/180C fan-forced. Line a large baking tray with baking paper and place a large wire rack on top. Give the rack a generous spray of oil.
  • Combine mince, breadcrumbs, egg white, onion, carrot, zucchini, Worcestershire and barbecue sauces, tomato paste, paprika and basil in a bowl. Season mixture well and mix thoroughly.
  • Lay down one sheet of filo pastry and lightly spray with oil. Add another pastry sheet on top, repeating the oil spray step. Layer the third pastry sheet. Spread 1⁄3 of the mince mixture along one long edge of the pastry. Roll up the pastry to seal the filling, lightly spraying the edge with oil. Cut the log into 6 pieces and place them seam-side down on a rack. Repeat the process to make a total of 18 sausage rolls. Lightly spray the rolls with oil, season with pepper, and bake for 25 to 30 minutes until golden.
  • Toss together lettuce, asparagus, and dressing in a large bowl. Sprinkle with seeds. Plate sausage rolls alongside salad, drizzle with sauce, and garnish with basil leaves.
