Healthier white Christmas slice recipe

Healthier twist on classic white Christmas, no copha, indulgent and nutritious festive treat.
Ingredients:
  • 90g (3/4 cup) cacao butter melts (see note)
  • 110g (1/2 cup) solidified coconut oil
  • 50g sachet coconut milk powder
  • 1 orange, rind finely grated
  • 100g (1 1/2 cups) shredded coconut
  • 75g (1/2 cup) Ocean Spray Reduced Sugar Craisins
  • 75g (1/2 cup) pistachio kernels
  • 80g (1/2 cup) whole roasted unsalted macadamias, coarsely chopped
  • 60g (1/3 cup) pepitas
  • 40g (1/3 cup) goji berries
  • 45g (1/3 cup) cacao nibs
Instructions:
  • Prepare an 18cm square cake pan by lining it with baking paper, making sure to leave extra paper extending up the sides.
  • In a heatproof bowl set over a saucepan of simmering water (without letting the bowl touch the water), melt the cacao butter and coconut oil together for 2-3 minutes, stirring occasionally until fully melted.
  • Take the cacao butter mixture off the heat. Incorporate coconut milk powder, vanilla, and orange zest, and mix until smooth.
  • In a large bowl, toss together coconut, craisins, pistachios, macadamia nuts, pepitas, goji berries, and cacao nibs. Pour in the warm cacao butter mixture, mix well, and let sit for 15 minutes, stirring occasionally, for the coconut to soak up some liquid. This prevents the coconut from settling at the bottom.
  • Press the mixture into the pan firmly and smoothly. Chill in the fridge overnight until firm. Lift the slice from the pan using the baking paper and cut into 18 bars or desired shapes with a sharp knife.
  • Refrigerate in an airtight container.
