Indulge guilt-free with Jessica Sepel's delicious homemade berry banana coconut ice cream.
Ingredients:
  • 250.00 ml coconut yoghurt
  • 250.00 ml frozen berries
  • 1/2–1 frozen banana, cut into chunks
  • 1/2 tsp vanilla bean paste
  • 27.00 gm maple syrup or stevia granules
  • Filtered water, if needed
  • Berries, pepitas or sunflower seeds, to serve
  • Desiccated coconut, to serve
Instructions:
  • Combine the yoghurt, berries, banana, vanilla, and sweetener in a food processor. Pulse until the mixture resembles soft ice-cream, adding water as needed for a creamy texture without it being too runny.
  • Transfer the mixture to a bowl or container and chill in the freezer for 10 minutes. Serve with a delightful topping of fresh berries, nutritious seeds, and shredded coconut.
