Nutritious twist on classic casserole with mushrooms, peppers, and whole-wheat bread crumbs.
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 medium red bell pepper, sliced
  • 8 ounces sliced fresh mushrooms
  • 0.5 teaspoon salt, divided
  • 0.25 teaspoon black pepper
  • 6 tablespoons all-purpose flour
  • 3 cups low-fat (1%) milk, heated
  • 0.5 cup shredded Cheddar cheese
  • 0.25 cup shredded Romano cheese
  • 7 cups frozen broccoli florets, thawed, well drained on paper towel
  • 1 cup fresh whole-grain bread crumbs
  • 1 tablespoon butter, cut into bits
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 2-quart baking dish.
  • In a large skillet over medium-high heat, sauté onion, bell pepper, and mushrooms with 1/4 teaspoon of salt and black pepper, stirring occasionally, until caramelized, about 12 to 15 minutes.
  • Sprinkle flour over mushroom mixture and cook, stirring, for 1 minute. Add the remaining 1/4 teaspoon salt and milk, bring to a boil, and stir until smooth. Let it boil until slightly thickened, about 3 minutes. Then stir in cheddar, 2 tablespoons romano, and broccoli before pouring the mixture into the prepared baking dish.
  • Combine bread crumbs with the remaining savory Romano cheese and generously sprinkle over the dish. Finish the topping by adding small amounts of butter evenly over the top.
  • Bake without a lid until the topping is golden and the casserole is bubbling, approximately 40 minutes. Allow it to cool for 5 minutes before serving.
