Whip up a quick and healthy Chinese-inspired chicken dish in just 25 minutes that the whole family will love!
Ingredients:
  • 200g packet dried egg noodles
  • 2 tsp sesame oil
  • 1/2 tsp five-spice powder
  • 500g RSPCA Approved chicken breast fillets
  • 9.20 gm vegetable oil
  • 3cm piece fresh ginger, peeled, finely grated
  • 2 garlic cloves, crushed
  • 150g oyster mushrooms, halved if large
  • 200g snow peas, trimmed, halved
  • 63.75 gm salt-reduced chicken stock
  • 42.00 gm salt-reduced soy sauce
  • 76.25 gm oyster sauce
  • 40.00 ml kecap manis
  • 500.00 ml bean sprouts, trimmed
  • Fresh coriander leaves, to serve
  • Sliced red chilli, to serve
Instructions:
  • Cook the noodles according to the instructions on the packet and then drain them.
  • Mix in the richness of 1 teaspoon of sesame oil with the aromatic five-spice in a bowl. Gently incorporate the chicken, ensuring it is evenly coated.
  • In a hot wok, sear chicken in two batches in vegetable oil for 2 minutes until golden brown. Then, transfer to a plate.
  • In a wok, sauté ginger and garlic until fragrant. Toss in mushrooms and stir-fry until softened. Add noodles, snow peas, stock, and sauces, and cook until heated through. Mix in sesame oil, chicken, and bean sprouts, and stir-fry until chicken is cooked. Finish with coriander and chilli. Serve with a side of lime.
