Whip up a delicious chicken chow mein in no time for a perfect weekday dinner.
Ingredients:
  • 440g pkt shelf-fresh hokkien noodles
  • 18.20 gm peanut oil
  • 500g RSPCA Approved Chicken Mince
  • 1 carrot, cut into matchsticks
  • 1 red capsicum, seeded, finely chopped
  • 2 garlic cloves, crushed
  • 10.00 gm curry powder
  • 60ml oyster sauce
  • 42.00 gm salt-reduced soy sauce
  • 60g pea
  • 1 bunch choy sum, coarsely chopped
  • 1/2 small wombok (Chinese cabbage), coarsely shredded
  • 2 spring onions, thinly sliced
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Allow them to sit for 5 minutes or until the noodles separate. Drain the noodles before using.
  • Heat oil in a hot wok, then stir-fry chicken until lightly browned, breaking up any lumps with a wooden spoon. Quickly add carrot, capsicum, and garlic, and stir for another minute.
  • Sprinkle in the curry powder and stir for 1 minute until aromatic. Pour in the oyster sauce, soy sauce, noodles, and ½ cup (125ml) water. Stir well for 2 minutes until everything is combined. Toss in the peas, choy sum, wombok, and spring onion, stir-fry for 1-2 minutes until wombok wilts slightly. Serve in individual bowls.
