Healthy veg and feta scrambled eggs

Whip up light, velvety low-cal eggs in 15 minutes. Here's the secret.
Ingredients:
  • 4.60 gm extra virgin olive oil
  • 75g sweet potato, peeled, coarsely grated
  • 1 small vine-ripened tomato, finely chopped
  • 2 green shallots, thinly sliced
  • 2 eggs, lightly whisked
  • 20g baby spinach
  • 20g feta, crumbled
Instructions:
  • In a non-stick frying pan over medium-high heat, heat oil and sauté sweet potato, tomato, and shallot for about 3 minutes until softened. Season to taste.
  • Simmer on low heat. Gently fold in the egg with a wooden spoon, cooking for 3-4 minutes until just set. Add the spinach and fold until wilted. Serve with a sprinkle of feta.
