Create stunning decorated Valentine's cookies using royal icing flood technique for a perfect gift.
Ingredients:
  • 1 cup unsalted butter, softened
  • 2 tablespoons unsalted butter, softened
  • 1.25 cups white sugar
  • 1 tablespoon lemon zest
  • 2 eggs
  • 2 cups all-purpose flour, sifted
  • 2 egg whites
  • 3 cups sifted confectioners' sugar
  • 1 teaspoon lemon juice, or as needed
  • red food coloring
Instructions:
  • In a large bowl, use an electric mixer to cream 1 cup plus 2 tablespoons of butter until smooth. Add white sugar and lemon zest, mix until combined. Slowly add eggs one at a time, beating well after each addition. Gradually mix in half of the flour until just combined, then mix in the remaining flour until dough forms.
  • Form the dough into a thick rectangle using your hands, then flatten it and tightly wrap it in plastic wrap. Chill in the refrigerator for 2 hours.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper.
  • Sprinkle flour on a clean surface and roll the dough into a thin circle. Use a heart-shaped cookie cutter to cut out shapes and place them on the baking sheets.
  • Bake in the preheated oven until lightly browned, around 10 to 15 minutes. Carefully remove hearts from baking sheets and transfer to wire racks to cool completely, approximately 15 minutes.
  • Whisk egg whites in a bowl until frothy. Gradually mix in confectioners' sugar, one tablespoon at a time, until stiff peaks form. Adjust consistency by adding lemon juice. For a thinner icing, incorporate more lemon juice. Separate icing into small bowls and dye with red food coloring for various shades of red or pink, reserving some white. Keep covered with a damp kitchen towel to prevent drying out.
  • For the flood technique, pipe a border of runny royal icing using a small round #2 tip around the edge of the cookies. Then, evenly distribute the icing in the center using a scriber tool. Add decorations as desired.
  • Create colorful hearts by adding dots onto the wet icing and gently drag the scriber tool downwards through them. Then, form lips by adding an oval shape onto the wet icing and shaping it into lips using the scriber tool.
  • To create unique designs, first outline the shape with a piping line and then add colorful stripes. Use a scriber tool to drag through the stripes. For a marbled look, pipe lines of various colors over a base layer and drag the scriber tool up and down through the lines. Let the icing set thoroughly.
