Hearty bolognaise (with quick and easy flavour starter)

Simplify winter cooking with pre-chopped frozen veggies for a delicious bolognaise.
Ingredients:
  • 750g beef mince
  • 2 x 400g cans diced tomato
  • Massel beef style liquid stock
  • 44.40 gm tomato paste
  • Cooked spaghetti, to serve
  • Freshly grated parmesan, to serve
  • Fresh basil leaves, to serve
  • 2 brown onions
  • 2 stalks celery
  • 1 large carrot
Instructions:
  • Prepare the mirepoix by dicing the onion, celery, and carrot into 1cm pieces. Place them in a large Ziploc bag, removing any excess air to prevent oxidation. Roll up the bag and seal it before refrigerating for up to 3 days.
  • Heat oil in a large saucepan over medium heat. Sauté the mirepoix and garlic for 10 minutes until the onion has softened. Add the mince and cook for 5 minutes, breaking it up with a wooden spoon until browned.
  • Combine tomatoes, stock, and paste in a pot and bring to a boil. Reduce heat and simmer covered for 30 minutes. Uncover and continue simmering for 20-25 minutes until thickened.
  • Top a serving of bolognese on pasta with freshly grated parmesan cheese and garnish with fresh basil leaves.
