Hearty and flavorful chili made with three beans, ground beef, tomatoes, and veggies - a crowd-pleasing favorite!
Ingredients:
  • 1.5 pounds ground beef
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 0.5 green bell pepper, chopped
  • 1 (28 ounce) can diced tomatoes
  • 1 (15.5 ounce) can light red beans, drained
  • 1 (15.5 ounce) can dark red beans, drained
  • 1 (15.5 ounce) can black beans, drained
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers
  • 3 tablespoons chili powder, or to taste
  • 2 teaspoons white vinegar
  • sea salt and ground black pepper to taste
  • shredded Cheddar cheese, or to taste
Instructions:
  • In a large pot over medium heat, sauté the ground beef in olive oil until browned and crumbly, about 10 minutes. Add onion, celery, and green bell pepper, and cook until the onion is translucent, about 5 minutes.
  • Combine diced tomatoes, light red beans, dark red beans, black beans, diced tomatoes with chile peppers, and chili powder with the meat mixture. Boil, then simmer on low heat until chili thickens, about 1 hour. Season with vinegar, salt, and pepper. Top with Cheddar cheese before serving.
