Hearty, comforting soup perfect for cold days. Pair with crusty French bread and a fresh salad for a satisfying meal. Adjust thickness with cream or water as needed.
Ingredients:
  • 2 cups brown lentils
  • 1 onion
  • 2 carrots
  • 3 leaves cabbage
  • 4 tablespoons vegetable oil
  • 1 (1 ounce) package dry onion soup mix
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 1 lemon
Instructions:
  • Add lentils, onion, carrots, and cabbage leaves to a pressure cooker. Pour in enough water to cover the ingredients by 1 1/2 inches and add 4 tablespoons of oil. Cook for 10 to 15 minutes, then allow the pressure to naturally reduce before opening the cooker.
  • Puree the soup in a food processor or blender until smooth. Add cumin, black pepper, cinnamon, all spice, cloves, and nutmeg. Transfer the mixture to a stock pot and heat. Once the soup is about to boil, mix in the onion soup mix. Simmer until thickened, then season to taste with lemon juice and salt before serving.
