Hearty Potato Skillet

Savory skillet loaded with crispy potatoes, mixed meats, veggies, gooey Cheddar cheese, and a sunny-side-up egg.
Ingredients:
  • 5 medium potatoes, cut into large bite-size pieces
  • 1 (12 ounce) package sausage links
  • 4 thick slices bacon
  • 2 ounces cooked ham, cubed
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 0.5 teaspoon seasoned salt, or to taste
  • Salt and pepper to taste
  • 0.25 cup shredded Cheddar cheese, or more to taste
Instructions:
  • Bring a large pot of salted water to a boil. Add potatoes and cook until just tender, for 7 to 10 minutes. Drain.
  • Preheat a large nonstick skillet over medium to medium-high heat. Cook sausage links until done, then transfer to a plate. In the same skillet, cook bacon until almost crispy. Towards the end, crisp up cubed ham for 5 to 8 minutes. Use a slotted spoon to take out the bacon and ham, letting excess grease drain on paper towels. Save the grease for later.
  • In a large pot over medium-high heat, heat 1 tablespoon of oil. Add onion and bell pepper, lightly season with salt and pepper. Cook and stir occasionally until tender, 10 to 15 minutes.
  • Add the cooked potatoes to the skillet with the bacon grease over medium heat. Carefully brown the potatoes on all sides, flipping occasionally. Season with seasoned salt and pepper to your liking.
  • Heat butter in a skillet over medium heat and cook eggs to your liking.
  • Divide the golden-browned potatoes onto 4 plates. Add the bell pepper-onion mixture, meats, and a sprinkle of Cheddar cheese. Finish by crowning each plate with a sunny-side-up fried egg.
