Hearty potato and kale stew with flavorful kielbasa slices, a satisfying one-pot meal.
Ingredients:
  • 6 large potatoes, peeled and cubed
  • 0.25 cup butter
  • 10 cups water
  • 2.5 pounds kale - rinsed, dried and chopped
  • 0.66666668653488 pound kielbasa sausage, sliced into 1/2 inch pieces
Instructions:
  • In a large stockpot over medium-high heat, cook the potatoes with butter and water until tender, about 20 minutes. Mash the potatoes until smooth in the same pot. Add back the reserved potato water, season with salt and pepper, and simmer for an additional 20 minutes.
  • Add the vibrant kale and flavorful sausage into the pot. Let it simmer for an additional 30 minutes. Enjoy your dish piping hot.
