Indulgent cappuccino bar cookies for coffee fans - simple and delicious!
Ingredients:
  • 1 teaspoon instant espresso coffee granules
  • 2 teaspoons very hot water
  • 1/2 cup butter or margarine, softened
  • 3/4 cup sugar
  • 3/4 cup toffee bits (not chocolate covered)
  • 1 tablespoon instant espresso coffee granules
  • 1 tablespoon very hot water
  • 2/3 cup sweetened condensed milk (not evaporated)
  • 1 cup sugar
  • 3 eggs
  • 2 tablespoons Gold Medal™ all-purpose flour
Instructions:
  • Preheat your oven to 325°F. Grease a 13x9-inch pan with shortening or cooking spray, then lightly flour it. In a small bowl, dissolve 1 teaspoon of espresso in 2 teaspoons of hot water. Cream together the espresso mixture, butter, and 3/4 cup of sugar with an electric mixer until fluffy. Gradually mix in 1 1/4 cups of flour until well combined. Press the dough into the pan evenly.
  • Evenly scatter 1/2 cup of toffee bits over the crust and gently press them in. Bake for 15 to 17 minutes or until the edges turn a light golden brown.
  • In a medium bowl, mix 1 tablespoon of espresso with 1 tablespoon of hot water until dissolved. Using an electric mixer on medium speed, blend in milk, 1 cup of sugar, and eggs until well combined. Stir in 2 tablespoons of flour, baking powder, and salt. Pour the mixture over the hot crust and spread it out evenly.
  • Bake for 28 to 33 minutes until firm. Sprinkle with the remaining 1/4 cup of toffee bits right out of the oven. Let it cool completely in the pan for about 1 hour. Cut into 8 rows by 4 rows to make bars.
