Helen’s avocado & peas with mashed potato

Ingredients:
  • 1 potato (250g)
  • 1 tablespoon milk
  • 100 g frozen peas
  • 1 large ripe avocado
  • 1 sprig of fresh mint
Instructions:
  • Peel and dice the potato, then boil for 10 minutes until tender. Drain and mash with the milk. In a separate pot, cook the peas in boiling water for 3 minutes until tender, then drain and let cool in a bowl. Halve, peel, pit, and roughly chop the avocado; add to the bowl. Finely chop and add mint leaves (if desired), then mash together. Serve and enjoy this delicious dish.
