Mouthwatering herb-crusted beef slices.
Ingredients:
  • 1.2kg-piece beef scotch fillet
  • 20.00 ml chopped fresh thyme
  • 20.00 ml chopped fresh rosemary
  • 2 tsp dried oregano leaves
  • 2 tsp cracked black pepper
Instructions:
  • Preheat the barbecue grill to high heat. Tie the beef with unwaxed kitchen string at 4cm intervals. Mix the oil, thyme, rosemary, oregano, and pepper in a flameproof roasting pan. Coat the beef with the mixture. Grill the beef for 10 minutes, turning occasionally, until browned.
  • Place the beef back in the pan and cover with foil. Cook over low heat in a closed barbecue for 1 hour for medium doneness. Transfer the beef to a plate and let it rest covered for 15 minutes before slicing and serving.
