Herring tacos

Whip up tasty tacos for a fun DIY meal, perfect for sharing with friends and family indoors or outdoors.
Ingredients:
  • 4 cloves of garlic
  • 1 small pinch of cumin seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon sweet paprika
  • 2 limes
  • olive oil
  • 8 herring fillets, scaled and pin-boned, from sustainable sources
  • 150 g fat-free natural yoghurt
  • 12 hard taco shells
  • 3 baby gem lettuce
  • 3 ripe avocados
  • 1/2 a bunch of fresh coriander
  • 300 g ripe cherry tomatoes
  • 1/2 bunch of fresh coriander
  • 1 fresh red chilli
  • extra virgin olive oil
Instructions:
  • Peel the garlic, then crush in a mortar and pestle with cumin, fennel seeds, and a pinch of sea salt until a paste forms. Add chili flakes, paprika, and juice from 1 lime, then mix in olive oil. Score herring skin with a knife, rub fish with the paste, and place on a baking tray, skin-side up. For the guacamole, combine avocado flesh in the mortar with lime juice, coriander, and seasonings. Fill avocado skins with the mixture and chill. Make salsa by chopping tomatoes, coriander, and chili, then mix with salt, pepper, and olive oil. Heat a griddle pan, cook the fish until crisp. Mix yoghurt and lime juice. Assemble taco shells and fillings. Serve fish with lettuce, cress, and sides. Enjoy!
