Protein-packed chocolate banana bread - ideal for breakfast or a snack.
Ingredients:
  • 1 serving nonstick cooking spray
  • 1.25 cups oat flour
  • 0.5 cup chopped walnuts
  • 2 scoops chocolate protein powder (such as Premier Protein®)
  • 3 teaspoons ground cinnamon
  • 1.5 teaspoons baking powder
  • 3 overripe bananas, mashed
  • 0.5 cup unsweetened applesauce
  • 0.25 cup milk
  • 2 large egg whites
  • 3 teaspoons pure vanilla extract
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C. Give a quick mist of cooking spray to a 9x5-inch loaf pan.
  • Combine oat flour, sugar, walnuts, protein powder, cinnamon, baking powder, and baking soda in a medium bowl, creating a delightful mixture of flavors and textures.
  • Combine mashed bananas, applesauce, milk, egg whites, and vanilla extract in a large bowl. Gently fold in the flour mixture until just combined. Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 35 to 40 minutes until the top of the bread springs back when lightly pressed and a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
