Delicious kiwifruit and banana bread, ideal with a hot cup of tea.
Ingredients:
  • 337.50 gm self-raising flour
  • 2.50 gm ground cinnamon
  • 118.80 gm brown sugar
  • 42.50 gm Brand desiccated coconut
  • 2 eggs
  • 128.75 gm milk
  • 60g butter, melted, cooled
  • 4.40 gm vanilla essence
  • 1 large ripe banana, peeled
  • 5 kiwifruit, peeled
Instructions:
  • Preheat the oven to 180C (160C fan-forced). Grease a 21cm x 10cm loaf tin and line the base and 2 long sides with baking paper, leaving an overhang on the sides.
  • In a large bowl, combine sifted flour and cinnamon with sugar and coconut. Create a well in the center. In a separate container, whisk together eggs, milk, melted butter, and vanilla extract. Blend banana and 3 kiwifruit in a food processor until smooth. Add the egg mixture and fruit puree to the dry ingredients, gently folding until just combined.
  • Transfer the mixture into the prepared tin and top with sliced kiwifruit. Bake for 45 minutes or until the center is just firm to the touch. Let it cool in the tin for 5 minutes, then move it to a wire rack to cool completely.
