Delicious Hokey Pokey-inspired sweet biscuits.
Ingredients:
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 26.80 gm golden syrup
  • 20.60 gm milk
  • 2.50 gm bicarbonate of soda
  • 375.00 ml plain flour
Instructions:
  • Preheat your oven to 180°C and prepare two large baking trays by lining them with parchment paper.
  • With an electric mixer, whip up a fluffy mixture of butter and sugar. Pop golden syrup and milk in a microwave-safe jug. Microwave for 20 to 30 seconds on HIGH until hot. Mix in bicarbonate of soda (mixture will froth up).
  • Combine the warm milk mixture with the butter mixture, stirring until fully incorporated. Then sift the flour over the batter and mix thoroughly.
  • Shape 2 teaspoonfuls of the mixture into balls and place them on prepared baking trays, ensuring some space for spreading. Use a floured fork to gently press the biscuits down. Bake until they turn golden and firm to the touch, about 12 to 15 minutes. Let them rest on the trays for 3 minutes before transferring them to a wire rack to cool. Once cooled, store the biscuits in an airtight container at room temperature.
