Elevated ambrosia salad: Cooked dressing, pineapple, mandarin oranges, coconut, orzo pasta, whipped topping.
Ingredients:
  • 8 ounces uncooked orzo pasta
  • 0.75 cup white sugar
  • 2 eggs, beaten
  • 2 (8 ounce) cans pineapple chunks, drained with juice reserved
  • 1 (11 ounce) can mandarin orange segments, drained
  • 1 cup shredded coconut
  • 4 cups frozen whipped topping, thawed
Instructions:
  • Bring a large pot of gently salted water to a boil. Boil the pasta until al dente, about 5 to 7 minutes. Drain and transfer to a large bowl to cool.
  • In a saucepan, combine sugar, eggs, flour, salt, and reserved pineapple juice. Whisk until smooth. Cook over medium heat, stirring constantly until the mixture thickens. Pour the mixture over cooled pasta and toss to coat. Refrigerate covered for at least 8 hours or overnight.
  • Combine the pineapple chunks and mandarin oranges with the pasta mixture, adding coconut if desired. Gently fold in the frozen whipped topping until well combined. Refrigerate until ready to serve.
