Holiday Apple Butternut Squash Soup

Creamy squash soup with apples, sweet potatoes, brown sugar, and Chinese five-spice - a cozy autumn delight.
Ingredients:
  • 2 cups Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic)
  • 2 pounds butternut squash - peeled, seeded and cut into 1-inch cubes
  • 2 carrots, diced
  • 1 sweet potato, peeled and cubed
  • 1 Gala apple - peeled, cored, and diced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 0.5 cup dry white wine (such as Chardonnay)
  • 0.5 cup cream
  • 0.25 teaspoon Chinese five-spice powder
  • 0.25 cup cooked and crumbled bacon
  • 0.25 cup chopped green onions
Instructions:
  • In a stock pot, mix together Swanson® Chicken Broth, squash, carrots, apple, and butter. Bring to a boil over medium-high heat. Let simmer on low until the vegetables and apple are soft, for about 20 minutes. Take off the heat and blend the mixture using an immersion blender or potato masher.
  • Combine white wine, cream, brown sugar, and five-spice powder in the pot. Simmer over low heat for about 10 minutes, stirring constantly until heated through.
  • Top with crispy bacon and fresh scallions for a flavorful finish.
