Deliciously easy family-friendly chicken dinner.
Ingredients:
  • 1/4 teaspoon pepper, if desired
  • 1 tablespoon butter or margarine
  • 4 boneless skinless chicken breast halves (1 1/4 pounds)
  • 1/2 teaspoon salt
  • 3/4 cup water
  • 1 envelope (0.87 ounce) chicken gravy mix
  • 1 bag (14 ounces) frozen baby whole potatoes, broccoli, carrots, baby corn and red pepper strips
  • 1 jar (4.5 ounces) sliced mushrooms, drained
  • Chopped fresh chives or parsley, if desired
Instructions:
  • Heat butter in a nonstick skillet until melted over medium heat. Season chicken with salt and pepper, then cook in the butter for 15-20 minutes, flipping once, until no longer pink in the center. Keep chicken warm after removing from skillet.
  • Combine water and dry gravy mix in a small bowl, then pour it into the skillet. Add frozen vegetables and mushrooms. Bring to a boil, then lower the heat and simmer uncovered for about 5 minutes until the potatoes are hot. Add chicken, cover, and simmer for 2 more minutes until the chicken is heated through.
  • To elevate the dish, generously spoon the vegetable and gravy mixture onto the chicken and garnish with a sprinkle of fresh chives.
