Make a quick and delicious pork and shrimp gumbo at home in 30 minutes.
Ingredients:
  • 1 teaspoon oil
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 medium green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/2 lb. boneless pork loin, cut into thin strips
  • 2 1/2 cups Progresso™ chicken broth
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried basil leaves
  • 1/2 to 1 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce
  • 1 (14.5-oz.) can Muir Glen™ Organic Diced Tomatoes, undrained
  • 1 cup uncooked instant rice
  • 1 (12-oz.) pkg. frozen shelled deveined cooked shrimp, thawed
Instructions:
  • In a heated Dutch oven, sauté onions, celery, bell pepper, and garlic for 5 minutes, stirring occasionally.
  • Add succulent pork to the sizzling pan and cook for 2 to 3 minutes until beautifully browned and no longer pink.
  • Combine broth, fresh thyme, basil, a dash of hot pepper sauce, and diced tomatoes, mixing thoroughly. Bring the mixture to a vigorous boil then stir in rice and fresh shrimp. Remove the pot from heat, cover, and let it sit undisturbed for 5 minutes until the shrimp are heated through. Optionally, serve with an extra kick of hot pepper sauce.
