Easy oven-baked crispy hash browns for a hassle-free cooking experience.
Ingredients:
  • 1 medium bell pepper, chopped (1 cup)
  • 1 medium onion, finely chopped (1/2 cup)
  • 1 bag (1 pound 4 ounces) refrigerated shredded hash brown potatoes
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter or margarine, melted
  • 1 tablespoon vegetable oil
  • Additional grated Parmesan cheese, if desired
Instructions:
  • Preheat your oven to 325°F. Combine the bell pepper, onion, potatoes, 2 tablespoons of cheese, salt, and pepper in a large bowl.
  • Pour the butter and oil into a 13x9x2-inch rectangular pan. Swirl the pan to evenly coat the bottom with the mixture. Spread the potato mixture in the pan.
  • After 35 minutes of baking uncovered, gently flip the potato mixture to cook the other side. Continue baking for an additional 5 minutes or until golden brown. Serve sprinkled with extra cheese.
