5 simple ingredients for homemade apricot jam - a delightful gift for any occasion!
Ingredients:
  • 2.5 pounds fresh apricots, pitted and finely chopped
  • 0.33333334326744 cup lemon juice
  • 5.75 cups white sugar
  • 0.5 teaspoon butter
  • 1 (1.75 ounce) package powdered fruit pectin
Instructions:
  • Combine apricots, lemon juice, and sugar in a large pot over medium heat. Add butter to reduce foaming. Bring the mixture to a rolling boil, stirring constantly. Quickly stir in pectin and boil for 1 minute until dissolved. Remove from heat and skim off foam with a metal spoon.
  • Prepare the jars by sterilizing them in boiling water for a minimum of 5 minutes. Fill the hot jars with apricot jam, leaving a 1/4 inch space at the top. Gently run a knife or spatula along the inner sides of the jars to release any air bubbles. Use a damp paper towel to wipe the rims clean. Seal the jars with lids and secure them with rings.
  • Fill a large stockpot halfway with water and bring to a boil. Using a holder, carefully lower the jars onto the rack, leaving a 2-inch space between them. Ensure the water level is at least 1 inch above the tops of the jars by adding more boiling water if needed. Cover the pot, bring the water to a full boil, and process for 5 minutes.
  • After removing the jars from the stockpot, allow them to cool on a cloth-covered or wood surface for at least 24 hours. Press the top of each lid to ensure a tight seal (lid does not move up or down). It may take up to 2 weeks for the jam to set completely. Store in a cool, dark place.
