Elevate your hot dogs with homemade bagel dogs stuffed with your favorite toppings and a side of zesty mustard. Option for quick version using store-bought pizza dough.
Ingredients:
  • 2 1/4 (270g) bread flour (can substitute all-purpose flour)
  • 3/4 cup (170g) water
  • 2 teaspoons (14g) honey (barley malt is also an option if you have it)
  • 1 teaspoon active dry yeast
  • 6 hot dogs, patted dry (see recipe note)
  • Cornmeal for dusting sheet pan
Instructions:
  • In a mixing bowl, combine bread flour, water, honey, yeast, and salt. Mix until well-combined, resulting in a slightly dry dough.
  • Knead the dough until a smooth ball forms, either in a stand mixer with a dough hook for 6-7 minutes or by hand for 10-12 minutes.
  • Allow the dough to rise: Cover it and let it rise for 1 to 1 1/2 hours in a cozy kitchen (70°F or below) until it becomes puffy and nearly doubles in size.
  • Prepare bagel dogs: Line a baking sheet with parchment paper and sprinkle with cornmeal. Divide the dough into equal parts for each hot dog. Roll each dough piece into a 12-inch rope on an unfloured surface. Wrap the dough around each hot dog, leaving 1 to 1 1/2 inches of hot dog exposed at each end. Pinch the dough ends underneath to secure.
  • Allow the bagel dogs to relax under a cloth for 20 minutes. Meanwhile, preheat the oven to 450°F and bring a large, wide pot of water (like a Dutch oven) to a rolling boil.
  • Boil the bagel dogs for 1 minute, then add toppings: Place any desired toppings in a shallow bowl. After boiling the bagel dogs, transfer them one by one to the toppings bowl, cornmeal side down. Finally, return the bagel dogs to the sheet pan and repeat with the others.
  • Transfer the pan of boiled bagel dogs to the oven and bake for 15-17 minutes, until they are deeply golden brown and shiny.
  • Let the delicious bagel dogs cool for 5 to 10 minutes before enjoying.
  • For optimal freshness and flavor, enjoy your bagel dogs on the day they are baked. If you have leftovers, avoid refrigeration to maintain the softness of the dough. Instead, wrap each bagel dog individually and freeze. When ready to enjoy, bake straight from the freezer at 360°F for 20-22 minutes.
